Well, my little boy (NEWLY HAIRCUTTED boy) is felling ICKY. So, am making his favorite, pancakes!
I have been inspired by the gals over at Iowa Corn Dog Blog, so here's our recipe!
2 cups Flour (I use Pauls Grains Whole Wheat)
2tbsp Baking Powder
1 tsp Baking Soda
4 Tbsp Vegetable Oil (I use whatever variety I can find locally)
6 Tbsp Sugar (haven't found any Iowa Sugar, so sometimes I use honey instead)
2 C Milk (Picket Fence)
2 Eggs (from the back yard, YUM)
1/2 tsp salt (I usually forget to add it, and they still taste great)
I keep all the dry ingredients in a jar, so when I'm ready to make my Pancakes, I just throw 2+ cups in a bowl, and add the wet ingredients.
This tastes great with the whole wheat flour, and even better when I use Local Honey.
To top our Pancakes we use REAL Maple Syrup (anyone know of Iowa Maple Syrup?) or Honey.

ReplyDeleteit's SOOO good :) i love it with the w/w flour
sometimes i substitute my over-ripe bananas for the liquid and throw in walnuts for banana nut pancakes
we also mix over-ripe banana, crushed pineapple and whatever fruit (berriers are good) in the blender then heat it on the stove with a tad of brown sugar for a fruit compote topping
course, the pineapples and bananas are not from iowa :)
my 4yr old is really into pancakes...i will try your version next time
My mom used to make some whole wheat pancakes that were soooooo good. You are such a good mom to make him some pan cakes. I hope he is feeling better today!

I just found out about Pauls Grains!! So excited to start buying from them! Still havn't found a source for local syrup :( I know Jill at Blue Gate said she would have Raw Honey in June!! Great Recipe!
ReplyDeleteIowa maple syrup comes from cedar rapids area -- indian creek nature center. Iowa's really on the western edge of maple syrup country. we've tapped a tree in wdm with luck if you wanted to try it at your place.
